Choice Sushi was founded by Peter Choi who opened his first store in Marsden Park, NSW in 2016. After a successful 7 years, store number 2 was opened in Casula, NSW in 2022.

Peter Choi, spent his previous years as an engineer for 7 years and a criminal lawyer for 3 years before deciding to go out on his own to become a business owner. Peter’s love of business and sushi stemmed from working in his mother’s takeaway sushi when he was on annual leave. Peter is passionate about customer service and wanted to open his own store with the goal of being the number 1 national sushi franchise nationwide.
